MIRACLE WHIP, KALE & APPLE POTATO SALAD

WHAT YOU NEED

3/4 cup MIRACLE WHIP Dressing

1 tbsp. GREY POUPON Dijon Mustard

2 tsp. cider vinegar

2 lb. new red potatoes, quartered, cooked and cooled

4 cups coarsely chopped kale

2 apples, chopped

1/2 cup thinly sliced red onions

MAKE IT

MIX dressing, mustard and vinegar until blended.

COMBINE remaining ingredients in large bowl. Add dressing mixture; mix lightly.

REFRIGERATE several hours or until chilled.

VARIATION

Add 6 slices cooked OSCAR MAYER Bacon, coarsely chopped, to chill salad just before serving.

1 pkg. (2-layer size) chocolate cake mix (not pudding in the mix variety)

3/4 cup unsweetened cocoa powder, divided

3 eggs

1-1/3 cups water

cup MIRACLE WHIP Dressing

oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened

1 tbsp. milk

1 tsp. vanilla

2-1/2 cups sifted powered sugar

MAKE IT

HEAT oven to 350° F.

SPRAY 13x9-inch pan with cooking spray. Coat with flour; set aside. Stir cake mix and ó cup cocoa in large mixing bowl. Add eggs, water and dressing; beat with mixer until well blended. Pour into prepared pan.

BAKE 30 to 35 min. or until toothpick inserted into center comes out clean.

BEAT cream cheese, milk and vanilla with mixer until well blended. Gradually add combined powdered sugar and remaining cocoa, beating well after each addition. Spread over cake.

GREASE AND FLOUR 3 (9-inch) round cake pans. Line bottoms of pans with waxed paper. Prepare cake batter as directed; pour evenly into prepared pans. Bake at 350° F 20 to 23 min. or until toothpick inserted in center comes out clean.

HOW TO TEST CAKE FOR DONENESS

To prevent overbaking, check cakes or cupcakes at the minimum baking time indicated in recipe. Insert a toothpick in center of cake. If it comes out clean, the cake is done. If it does not come out clean, return to the over for a few additional minutes before rechecking.

1/4 cup  butter or margarine, softened

3 cups  powdered sugar

2/3 cup  milk

Make It 

HEAT oven to 350°F.

MELT 6 oz. chocolate as directed on package; cool. Meanwhile, beat dressing, brown sugar and 1-1/2 tsp. vanilla in large bowl with mixer until blended. Beat in eggs and melted chocolate. Combine flour, baking soda and salt. Add to chocolate mixture alternately with water, mixing well after each addition.

POUR into 2 parchment paper-lined 9-inch round pans sprayed with cooking spray.

BAKE 30 to 35 min. or until toothpick inserted in centers comes out clean. Cool 10 min.; remove from pans. Immediately remove parchment paper. Cool cakes completely on wire racks.

MEANWHILE, microwave remaining chocolate and butter in large microwaveable bowl on HIGH 1 to 1-1/2 min. or until butter is completely melted, stirring every 30 sec. Stir until chocolate is completely melted. Cool.

ADD powdered sugar, milk and remaining vanilla to butter mixture; beat until blended. Use to fill and frost cake layers.
